I made a big batch of black beans yesterday for dinner, and tons left. I was breaking my head what to do with that, first, I thought to make meatballs or a salad, but it didn’t really feel right. I wanted to come up with something different.
The day after, I got into my creation mode and literally opened the fridge to see what was in there and decide to do an experiment. For a while, I had promised my boys a healthy treat so I decided to try something new. The result was a big hit and I’m not even kidding after 30 min all my healthy treats were gone lol, so I did another batch day after.
It may not look as good as other “fancy” sugary treats, but its so delicious and moist, healthy and nutritious. I decide to call it Bombastic Healthy Treat.
The first time I made this bombastic treat in the microwave, it was ready in 10 min (honestly I’m not a big fan of microwave cooking) but I had no time, sometimes its just really convenient. The next day I made them in the oven in a mini muffins pan. They both turn amazing.
Next thing I had to share and inspire people to experiment with a healthy cooking alternative.
- 1 cup of black beans
- 1 medium carrot
- 2 bananas
- Handful spinach
- 10 dates
- Half cap almonds
- Half cap walnuts
- Tablespoon coconut butter
- Tablespoon shredded coconut
- Tablespoon cocoa
- Tablespoon hempseed
- Half spoon baking powder
- Spoon vanilla extract
Preheat oven to 350°F and place rack in the center of the oven, I used mini baking cups.
Combine the ingredients in the food processor until its shred evenly. (I used with Hamilton Beach 70725A that I purchased from Amazon and it did a great job)
* If you want the bombastic treat to be a bit crunchy, you can chop the nuts separately to little pieces.
*If you want it to be sweeter you can add honey, maple syrup or extra dates
Microvawe: put the mixture in a microwave safe dish (I used pyrex plate) and microwave for 10 minutes.The middle was still a bit soft still. I ended up cutting out the undercooked part and cooked it for a few minutes extra. Next time I plan to split it into two smaller batches for more even cooking.
Oven: put in mini baking cups pan and bake it for 22 min. (I got 33 mini muffins with this mixture).
