1. Preheat oven to 350°F and place rack in the center of the oven, I used mini baking cups.
  2. Combine the ingredients in the food processor until its shred evenly.
  3. * If you want the bombastic treat to be a bit crunchy, you can chop the nuts separately to little pieces.
  4. *If you want it to be sweeter you can add honey, maple syrup or extra dates
  5. Microvawe: put the mixture in a microwave safe dish (I used pyrex plate) and microwave for 10 minutes.The middle was still a bit soft still. I ended up cutting out the undercooked part and cooked it for a few minutes extra. Next time I plan to split it into two smaller batches for more even cooking.
  6. Oven: put in mini baking cups pan and bake it for 22 min. (I got 33 mini muffins with this mixture).
