Yams & tahini cookies / frozen treats
Lately, I discovered how good yams and tahini goes together. Its been a fantastic combination at my dinner table, roasted yams with delicious tahini on top. So I decided to try something a bit different, that will make delicious, healthy, and nutritional desert. I used the same mixture to make a frozen treat and soft, delicious cookies. It will make about 30-40 cookies or frozen treat, make both it is a great way to try something different. The freezing treats its absolutely one of a kind, the taste rich and the cold hard texture sure add to the uniqueness. The cookies soft, mouth-watering, and taste a bit caramelized on the edges that add to the enjoyment.
  1. Bring a pot of salted water to a boil. Add potatoes and cook until tender, 20 to 30 minutes. Or use can mashed yam.
  2. Mash the yams using hand masher, or hand blender, add a bit water if needed.
  3. Transfer the puree yams into a bowl, and add the rest of the ingredients.
  4. Mix well using a spoon.
  5. For the frozen treats – fill the molds with the mixture, freeze until hard and frozen, about 2-4 hours, transfer to frozen treats into freezing bag or container and serve straight from the freezer.
  6. For the cookies – drop the cookie mixture to the baking sheet using a full teaspoon for each cookie, bake for about 20 minutes, or until start to brown on the edges.
